  2. نلف العجينة بغشاء بلاستيكي ونتركها ترتاح قليلا.
  3. نقطع العجين الى ١٤ او ١٥ كويرة من حجم ١٠٠ غرام وناخد الكويرات ونكرصها في النخالة او السميد الرقيق ونضعها على صينية الفرن ونتركها تختمر جيداً ،نأخذ شوكة ونضع ثقب على الخبز كي لاينتفخ من الوسط داخل الفرن وندخلها الى فرن مسخن مسبقا على نار عالية من تحت فقط ونترك الخبز يتماسك قليلا وننزل الخبز الى اسفل حتى يتحمر وجه الخبز ونقلب الخبز على ظهره ليتحمر من الاسفل (فرن الغاز).
